Bubbly Design Co. fall update

Happy Monday, friends! Did you have a fun-filled Halloween weekend? We had a fairly low-key holiday which allowed me to finally catch up on some blogging… finally! As they say “A Sunday well spent brings a week of content” and I’m thrilled to have some fun posts to share with you this week. But first, let’s catch-up a bit shall we?

Over the past few weeks, we’ve been trying to enjoy as much of the beautiful east coast fall as possible. The weather has been perfection with just one brief cold spell and we’re squeezing in as many outdoor activities as possible. We’ve been hiking in Sterling Forest, apple picking in New Jersey, and Oktoberfest-ing in Bear Mountain. We’ve visited family {including my brand new niece!} and even had a few visitors ourselves. My little sister came down from Rochester for a week and a few friends have stopped in for weekend visits, too.

But amidst all that fun, T-man and I were duds and completely ignored any form of costume planning. Instead we celebrated by having a small gathering of friends at our little 8G apartment. We kept the menu simple with White Bean Chili, Diablo Margaritas and Scream Cheese Brownies. The chili literally takes all of five minutes and five ingredients to make. I love hosting but strongly believe the easier the better when you’ve got cleaning, prepping, and serving duties.

Fall cocktails // Bubbly Design Co.Fixings for Diablo Margaritas // Bubbly Design Co.Because of the ginger beer, the margaritas were sort of like a Mexican Moscow Mule and the brownies were a simple nod to the Halloween festivities. I loved that the margaritas called for creme de cassis, too {a black currant mixer} because it just so happens to be used in one of my favorite cocktails, Kir Royal. Guess what I’ll be making next weekend?!

And because I just can’t help it, here’s my little niece’s adorable Halloween outfit, which she wore during our most recent visit. She’s already a month old! Later this week, I’ll have more to share about her nursery and the little welcome party {aka baby shower} we threw for her in September.
