Guys, I know it has been foooooreverrrr since I last posted {10 points if you can name the movie reference}. I promise I’ve missed you and this whole blogging thing! Of course life gets busy and the warming weather has put a damper on my desire to sit in front of my laptop. But I also talk myself out of blogging sometimes. I forget that creative projects don’t have to be rational. They can be indulgent and ‘just for fun.’ Blogging sometimes serves no purpose at all other than to share my life and be creative. But maybe that’s enough.

Anyways, enough with the serious talk. What better way to dive back into blogging than with a simple life moment? It’s actually a fairly new topic for the blog but one I’ve been wanting to share — a recipe. We tested this out this week and it’s quickly winning our hearts as the perfect summer weeknight meal. And just in time for summer, it’s made where else? On the grill!

When I saw the headline, “The Ultimate Grilling Recipe,” I expected it to be tasty but I also figured it was just marketing speak. I’m sure it’s great, but really what makes it the ultimate or in my case “the perfect meal” for summer? Well friends, let me tell you, everything about this recipe makes it the ultimate, perfect, easiest, and most delicious. Everything I tell you. It lived up to the superlatives.

So what is this magical recipe?

Grilled Peach Prosciutto Flatbread with Goat Cheese

What you need:

  • Naan
  • Olive oil
  • Minced garlic
  • Sliced peaches
  • Prosciutto
  • Goat cheese
  • Basil

The instructions could not be simpler and took a whopping 10 minutes.

Once we had the ingredients collected, we grilled the naan on one side until slightly charred to stiffen them up and create more of a pizza crust. Then we topped with all the goodies — to me, the garlic made all the difference here. Finish with basil, which we pulled from our newly minted herb garden.

A small note on the naan. I tend to grab the Stonefire brand, which I’ve found at most major groceries. It comes in a two-pack, which is great for sharing {T-man and I each had one to ourselves}. The packaging even says “Perfect for Pizzas” now! For the peaches, I just learned that the best way to choose them is with your nose — it’ll guarantee you a better flavor even more so than the softness touch.

I have been making a veggie & hummus grilled pita pizza for years but this recipe takes things to the next level. I imagine you could also swap the naan for pita, depending on your preference.
